Ingredients
2 lbs. Ground Beef (80/20 is best)
1 tsp. Kosher Salt
1/2 tsp. Black Pepper (medium grind)
1/4 tsp. Cumin Powder
1/4 tsp. Cayenne Powder
1/4 tsp. Cajun Seasoning
Directions
- Combine all ingredients and mix gently only enough to incorporate all the ingredients.
- Marinate for 1-2 hrs or overnight in refrigerator.
- Form the patties into 4-6oz balls and lay flat on cast iron pan or a griddle.
- Smash the burgers using whatever non slotted flat metal spatula you have available. Press firmly down and hold for around 10 seconds.
- Cook the burgers for around 1-2 minutes per side and flip only once. The burger should form a dark brown crust.
- After flipping, layer on desired cheese and let melt on top of meat.
- Slide burger on the buns and serve with your favorite sauce (ketchup, mayo, and mustard is classic) and toppings of choice.
Tips

- Let the cooking surface come to a smoke point before dropping in the meat.
- Any burger buns will work but we found that ones that hold onto liquids better like brioche will be a better choice in most cases. Also, most burger buns from stores contain a ton of preservatives so if you can get fresh ones, that’s even better.
- Experiment with the types of sauces and topping. Sometimes we make the patties and let the guests put on their favorite toppings. One of our favorites is caramelized jalapenos and onions, garlic mayo, tomatoes, and onions. If you want a recipe for any of those, drop a comment below.
