It’s finally getting cold in Texas! I can’t believe it. We even had some snow flurries dust our driveways! I am sure it will be back to 70 degree weather soon, so no need to panic. I personally do not do well in cold weather, so I hope this snow isn’t sticking around for long. In the meantime, the best way I know how to conquer the cold is to warm up in the kitchen! Recipe testing is always a fun way to pass the time when you are stuck indoors. So, this post features my latest experimentation, and current cookie obsession!

Yes, the holidays are over, but my love for cinnamon is still alive and kicking. It is such a fun flavor to experiment with all winter long, so I decided to include the flavor in these delicious Cinnamon Walnut Snow Cookies. These treats are incredibly soft, bursting with flavor, and the addition of walnuts give them a perfect crunch as well. Plus, rolling them in powdered sugar is the icing on the cake (well…cookie in this situation). 🙂 I highly encourage you to try a batch of these during these cold winter days. Grab your ingredients, a cookie pan and lets get through this weather together!

Things to Know Upfront/Quick Tips

  • A food processor will be needed to chop the walnuts as well as to combine them with your cinnamon and flour.

What You Need

Dry Ingredients:

  • 2/3 cup (133g) white granulated sugar
  • 1/3 cup (71g) brown sugar
  • 2 cups (240g) all-purpose flour
  • 2 Tbsp. (15g) all-purpose flour to be used with walnuts and cinnamon
  • 1 tsp. (4g) baking powder
  • 1/4 tsp. (1.5g) salt
  • 2-3 tsp. (5–8g) cinnamon
  • 2 cups (234g) walnuts
  • 1 cup (120g) or more powdered sugar

Liquid/Other Ingredients:

  • 1 cup butter (salted and softened)
  • 1 egg
  • 1/2 tsp (2g) vanilla extract

Step By Step

  • Set your oven to 350 degrees.
  • In a food processor, chop your walnuts, then combine cinnamon and 2 Tbsp. (15g) of flour. Don’t over process.
  • In a medium sized bowl combine your dry ingredients — flour, baking powder, and salt. Set aside.
  • Cream your sugars and butter. Mix until light and fluffy.
  • Add in your egg and vanilla. Mix until combined.
  • Add in your medium sized bowl of dry ingredients. Mix until just incorporated.
  • Mix in your walnuts and cinnamon mixture until just incorporated.
  • Scoop tablespoon size balls (I used a cookie scoop), roll them with your hands and place on a cookie sheet with parchment paper or a slipmat.
  • Bake for 8-10 minutes.
  • Let cool on a countertop or on a cooling rack.
  • Place a good amount of powdered sugar in a ziploc bag.
  • Once your cookies are cool put them in your ziploc bag and coat with powdered sugar.

Enjoy!
