For the Loaf

  • 1½ cups + 1 tablespoon all-purpose flour, divided – (or oat flour or gluten free all-purpose flour)
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup plain nonfat Greek yogurt
  • ½ cup (1 stick) butter, melted – (or applesauce)
  • ½ cup granulated sugar (or alternative)
  • ¼ cup brown sugar (or alternative)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • ¼ cup fresh lemon juice
  • 1½ cups fresh or frozen blueberries

For the Lemon Glaze

Optional but highly recommended.

  • ¾ cup powdered sugar
  • 2–3 tablespoons skim milk (or alternative)
  • ½ teaspoon lemon zest

👩‍🍳 How to Make Lemon Blueberry Loaf

1. Prep Your Pan

Preheat your oven to 350°F.

Spray a 9×5-inch loaf pan with nonstick cooking spray or line it with parchment paper, leaving a little overhang so you can easily lift the loaf out later.

Because fighting a loaf pan is not part of the recipe.

2. Mix the Dry Ingredients

In a medium bowl, whisk together:

  • 1½ cups all-purpose flour (or oat flour or gluten free all-purpose flour)
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Set aside.

3. Mix the Wet Ingredients

In a large bowl, stir together:

  • ¾ cup Greek yogurt
  • ½ cup melted butter (or applesauce)
  • ½ cup granulated sugar (or alternative)
  • ¼ cup brown sugar (or alternative)
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 tablespoon lemon zest
  • ¼ cup fresh lemon juice

Mix until everything is well combined.

Your kitchen should already be smelling pretty fantastic at this point.

4. Bring It Together

Gently fold the dry ingredients into the wet ingredients until just combined.

Don’t overmix!

A few small streaks of flour are better than aggressively mixing the batter into submission. Overmixing can give you a dense loaf instead of the soft, tender texture we’re after.

5. Add the Blueberries

Place 1½ cups blueberries in a small bowl and toss them with the remaining 1 tablespoon flour.

Gently fold the blueberries into the batter.

This little flour trick helps keep the berries from sinking straight to the bottom of the loaf.

Because apparently blueberries also like causing chaos.

Using frozen blueberries? Don’t thaw them first. Toss them with the flour while they’re still frozen and gently fold them into the batter.

6. Bake

Pour the batter into your prepared 9×5-inch loaf pan and smooth the top.

Bake at 350°F for 45–55 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.

Start checking around the 40-minute mark.

If the top is getting too golden before the center is finished, loosely tent the loaf with aluminum foil and continue baking.

7. Let It Cool

Let the loaf cool in the pan for 15 minutes.

Then transfer it to a wire rack and allow it to cool completely.

We know.

Waiting is rude.

But if you glaze the loaf while it’s still warm, the glaze is going to melt right off instead of giving you those pretty drips.

8. Make the Lemon Glaze

Once the loaf is completely cool, whisk together:

  • ¾ cup powdered sugar
  • ½ teaspoon lemon zest
  • 2 tablespoons skim milk

Add the remaining 1 tablespoon milk, a little at a time, until you reach your preferred consistency.

Want a thick, dramatic drizzle? Use less milk.

Want a thinner glaze that cascades down the sides? Add a little more.

Pour over the completely cooled loaf.

Then slice, serve, and try to act like you didn’t immediately go back for another piece.


✨ Different Ways to Make This Lemon Blueberry Loaf

🧈 The Classic Version

This is the full original recipe and the one to make when you’re going for that classic bakery-style loaf.

Use:

  • 1½ cups + 1 tablespoon all-purpose flour
  • ¾ cup Greek yogurt
  • ½ cup butter
  • ½ cup sugar
  • ¼ cup brown sugar
  • 2 eggs

This version gives you a rich, tender crumb with a buttery flavor and beautiful golden crust.

🌾 Gluten-Free Lemon Blueberry Loaf

Want to make it gluten-free?

Replace the 1½ cups + 1 tablespoon all-purpose flour with 1½ cups + 1 tablespoon 1:1 gluten-free baking flour.

Choose a gluten-free blend designed to replace all-purpose flour cup-for-cup. If your blend already contains xanthan gum, you generally don’t need to add additional xanthan gum.

Keep the remaining ingredients the same.

Tip: Gluten-free flours can behave differently from brand to brand, so the batter consistency and baking time may vary slightly.


🌾 Oat Flour Lemon Blueberry Loaf

For an oat flour version, replace the 1½ cups + 1 tablespoon all-purpose flour with 1½ cups + 1 tablespoon oat flour.

You can use store-bought oat flour or make your own by blending rolled oats into a fine flour.

For a gluten-free loaf, make sure you’re using certified gluten-free oat flour.

The finished loaf will have a slightly heartier texture and a cozy oat flavor.


🌰 Almond Flour Version

Want to experiment with almond flour?

Because almond flour behaves very differently from wheat flour, we don’t recommend automatically replacing the all-purpose flour 1:1.

Instead, use a lemon blueberry loaf recipe specifically formulated for almond flour or be prepared to adjust the other ingredients to compensate for almond flour’s higher fat content and lack of gluten.

Translation: This is one of those swaps where a little baking chaos is expected.


🍎 Applesauce Version

Want to skip the butter?

Replace the ½ cup melted butter with ½ cup unsweetened applesauce.

This creates a softer, lighter loaf with a slightly different crumb and a subtle natural sweetness.

For the best flavor, use unsweetened applesauce.


✨ Lower-Sugar Version

Want to reduce the traditional sugar?

Replace the ½ cup granulated sugar with ½ cup Splenda Allulose Blend or another granulated sugar alternative intended for baking.

For the ¼ cup brown sugar, use ¼ cup brown sugar alternative designed for baking.

You can also use a monk fruit baking blend according to the manufacturer’s substitution instructions.

Keep in mind that different sugar alternatives vary in sweetness, moisture, and how they brown during baking.

Our favorite part: You still get that bright lemon-and-blueberry flavor without relying entirely on traditional sugar.


🌱 Vegan Lemon Blueberry Loaf

Want to make it vegan? You’ll need to swap the dairy and eggs. Try:

  • ¾ cup plain Greek yogurt → ¾ cup unsweetened plant-based yogurt
  • ½ cup butter → ½ cup unsweetened applesauce or plant-based butter
  • 2 eggs → vegan egg substitute equivalent to 2 eggs
  • 2–3 tablespoons skim milk → plant-based milk

For a homemade egg replacement, you can use 2 flax eggs, made with 2 tablespoons ground flaxseed + 5 tablespoons water. Let the mixture sit for about 5–10 minutes until thickened before using.

The exact egg substitute can affect the texture, so this is one variation where a little experimentation may be necessary.

🥛 Dairy-Free Lemon Blueberry Loaf

For a dairy-free version, replace:

  • ¾ cup Greek yogurt → ¾ cup unsweetened dairy-free yogurt
  • ½ cup butter → ½ cup plant-based butter or unsweetened applesauce
  • 2–3 tablespoons skim milk → dairy-free milk like almond milk

If you’re also avoiding eggs, combine these swaps with the vegan version above.


🍋 The Lemon Glaze: To Glaze or Not to Glaze?

Technically, you can absolutely eat this loaf without the glaze. But we’re going to gently suggest that you don’t.

The glaze combines:

  • ¾ cup powdered sugar
  • 2–3 tablespoons skim milk (or almond or oat milk)
  • ½ teaspoon lemon zest

It adds an extra hit of citrus and sweetness that takes this loaf from “really good” to “wait, who made this?”

Want to make the glaze dairy-free? Use your favorite plant-based milk.

Want to make it vegan? Use plant-based milk and a powdered sugar that fits your dietary needs.

Want a thicker glaze? Start with less milk.

Want it thinner? Add more.

It’s really hard to mess up powdered sugar and lemon.

💡 Tips for the Best Lemon Blueberry Loaf

Use fresh lemons.

The 1 tablespoon lemon zest + ¼ cup fresh lemon juice really make this loaf shine.

Fresh lemon gives you a much brighter flavor than bottled juice.

Zest before juicing.

Trust us.

Trying to zest a floppy, already-squeezed lemon is a tiny kitchen nightmare.

Don’t overmix.

Once the flour goes in, mix just until combined.

Coat your blueberries.

Tossing 1½ cups blueberries with 1 tablespoon flour helps keep them from sinking.

Don’t thaw frozen blueberries.

Use them straight from the freezer.

Check the loaf early.

Start checking around 40 minutes, especially if your oven runs hot.

Tent if necessary.

If the top is beautifully golden but the center still needs time, loosely cover the loaf with foil.

Let it cool before glazing.
