Healthy Apple Cinnamon Oatmeal Cookies

Cook Time 13 minutes
Chill Time 30 minutes

Ingredients

Dry Ingredients

  • 3/4 cup (85g) whole wheat flour
  • 1 cup (89g) instant (minute) oats (the canister kind and not in the small packages)
  • 1 1/2 tsp. (6g) baking powder
  • 1 1/2 tsp. (4g) cinnamon (I may have added a bit more to give it some extra spice)
  • 1/4 tsp. (1.5g) salt

Wet Ingredients

  • 2 Tbsp. (27g) coconut oil (melted) or you can substitute unsalted butter
  • 1 egg
  • 1 tsp. (4g) vanilla extract
  • 1/2 cup (165g) agave syrup
  • 1 cup (125g) diced apples (red for a sweeter taste or green for a tangy taste) *I would dice these as small as you can

Instructions

  • Preheat your oven to 325.
  • Line a baking sheet with parchment paper or a silicon baking mat.
  • In one bowl mix together your dry ingredients (oats, flour, baking powder, salt, cinnamon).
  • In another bowl mix together your wet ingredients (melted oil/butter, egg, vanilla, agave).
  • Pour your wet ingredients into your dry ingredients and mix until just combined.
  • Fold in your diced apples until they are just incorporated.
  • Chill the dough in the fridge for about 30-45 minutes to firm up a bit
  • Drop tablespoon size balls onto your baking sheet and flatten slightly (these will not spread much at all once in the oven).
  • Bake for 12-13 minutes. Don’t over bake or they will come out too dry. So just when they are set remove from oven and let cool for about 10 minutes.
