Peanut Butter Avocado Skinny Protein Brownies

Peanut Butter Avocado Skinny Protein Brownies

Cook Time 35 minutes

Ingredients

Wet Ingredients

  • 2 avocados, mashed
  • 2 Tbsp (27g) coconut oil (melted)
  • 2 eggs
  • 1/2 cup (158g) maple syrup
  • 1 tsp. (4g) vanilla extract

Dry Ingredients

  • 1/4 cup vanilla protein powder
  • 1/2 cup (48g) oat flour (or almond flour)
  • 1/4 cup (21g) unsweetened cocoa
  • 1/2 tsp. (2g) baking powder
  • 1/4 tsp. (1.5g) salt
  • 2 Tbsp (32g) peanut butter (Do not mix! You will place this on top of your batter later.)
  • 1 Tbsp. (11g) dark chocolate chips (if you want to add on top after baking!)

Instructions

  • Preheat your oven to 350 degrees.
  • Grease a 9×9 inch baking pan with coconut oil spray or PAM. Set aside.
  • Mix your wet ingredients in one bowl. Mix your dry ingredients in another bowl.
  • Add your wet ingredients to your bowl with the dry ingredients. Mix until combined.
  • Pour your batter into the greased baking pan.
  • Drop your peanut butter on top of the batter and use a fork or spoon to make swirls. My peanut butter was stubborn, so I ended up mixing it into the batter more than intended. It still worked out just fine.
  • Bake for 30-35 minutes until a toothpick inserted comes out clean.
  • After baking and while your brownies are still hot, place some dark chocolate chips on top. Use a knife or spatula to spread the melted chocolate across your brownies creating some chocolate swirls. 🙂 You could also use peanut butter chips if you prefer more peanut butter flavor instead.
  • Let cool and then enjoy!
