Preheat Your Oven: Set the oven to 350°F (175°C) and line baking sheets with parchment paper.
Mix Wet Ingredients: In a large bowl, cream together the peanut butter, butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract. Scrape down the sides and bottom of your bowl as needed in between additions.
Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture until just combined.
Add the Fun: Fold in the Reese’s Pieces (we used mini, but regular size candies does the trick, too!) + peanut butter chips (optional, but highly recommended), reserving a few to press on top of the cookies for decoration.
Scoop and Shape: Scoop out generous 2 Tbsp balls of dough and roll into balls, then roll in your granulated sugar. Next, place them on the prepared baking sheets, leaving about 2 inches of space between each cookie.
Bake: Bake for 10–12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Enjoy: Serve warm with a glass of milk or your favorite beverage.
Cookies will stay fresh in an airtight container for up to five days.
